Here is an AWESOME list on the ARMA site that includes most of the major historical fight manuals people are referencing.
A lot to be learned from these.

A lot of these are in a form of archaic German. But learning some German helps you understand some of the terminology associated with German swordsmanship. I also think it's cool to study some of the language as part of the experience of practicing that particular martial culture. Much like learning some japanese can deepen your experience if you are learning a martial art from that area. Sir Adam has been using rosetta stone and seems to be putting together a vocabulary.

Also, I just want more people to practice with. My German skills have back-slid by %50 at least due to lack of use. Anyone with German language as a hobby please feel free to practice on me.

There seems to be some overlap (some of the links on this site point to the ARMA site Sir Dallas posted) but there are a few manuals that don't seem to be on that link. Bonus: manuals are organized by time period. Just posting this to add to the pile.
